Delicious flourless muffins made with steamed and mashed sweet potatoes, peanut butter, and coconut sugar, topped with peanut butter cups. These muffins are fluffy and can be made in different sizes. This recipe yields about 6 large muffins.

1: Preheat oven to 350°F and spray/line a muffin tin. 2: Put all of the ingredients into a food processor (or high powered blender) and blend until everything is well combined. 3: Fill each muffin cup about 1/4 of the way with batter, add a pb cup, then add more batter on top. 4: Bake for 18 minutes.View original recipe
