1. Preheat oven to 350F & line a baking sheet.
2. In a mixing bowl, whisk together the milk and egg.
3. Stir in the flours, baking powder, beet powder, cacao powder, and sugar.
4. Use a mini cookie scoop to make about 23 mini cookies, flatten each {dough will be a little sticky, so you can grease a piece of parchment paper to help} and bake for 8 minutes.
5. Once cooled, spread icing in the middle of the cookies & top with powdered sugar. Enjoy!
