1. Preheat the oven to 350F and line a baking dish with parchment paper (an 11x7 dish for a thin cookie crust is suggested). 2. In a mixing bowl, whisk together the egg, vanilla extract, and melted butter. Then stir in the dry ingredients and use your hands to form a dough. 3. Press the dough into the baking dish and bake for 18 minutes. 4. Combine the frosting ingredients (unsweetened coconut cream, vanilla extract, powdered sugar), using a hand mixer if desired, and let it sit in the fridge while the cookie crust cools. 5.
