Delicious brownies layered with a creamy cookie dough on top! This recipe combines brownie batter made with gluten-free flour, cocoa powder, coconut sugar, and coconut oil, topped with a rich cookie dough made from almond flour and peanut butter.
Preheat oven to 350F and grease + line an 8x8 baking dish with parchment paper.
In a microwave safe bowl or on the stove, melt the coconut oil and chocolate chips together— then stir in the sugar.
In a mixing bowl, whisk together the eggs then add in the chocolate mixture.
Add in the flour, cocoa powder, and baking powder and stir just until combined (try not to over-stir).
Pour the batter into the baking dish and bake for 35 minutes. Once cooled, add the cookie dough on top. Enjoy!
