Apple Compote Filled Pumpkin Snickerdoodles

Delicious pumpkin snickerdoodle cookies filled with apple compote and topped with a cinnamon sugar coating, made for a perfect treat. This recipe yields 2 cookies and combines the flavors of pumpkin and apple with a hint of cinnamon.

What you need

tsp cinnamon

tsp vanilla extract

tsp maple syrup

tsp baking powder

tbsp pumpkin puree

tbsp granulated sugar

tsp ground cinnamon
tbsp oil

tbsp all purpose flour

tbsp apple
Instructions
1: Preheat oven to 350F & line a baking sheet with parchment paper. 2: In a mixing bowl, combine the pumpkin purée, vanilla extract, and oil—then add in the sugar, flour, cinnamon & baking powder. Dough will look a little sticky; set this aside to thicken a little. 3: Stir together all of the apple compote ingredients then set aside. 4: Stir together the cinnamon sugar coating ingredients, then set aside. 5: Split the dough in half, then drop one half into the cinnamon sugar coating and mix it around until fully coated. Repeat with other half & place them on the baking sheet. 6: Use the tablespoon to press a hole into the middle of each cookie, add half of the apple compote to each cookie, and bake for 13 minutes.View original recipe
