LEMON CAKE COOKIES

1. Preheat the oven to 350F & line a baking sheet with parchment paper.
2. In a mixing bowl, whisk together the wet ingredients—then stir in the rest of the ingredients.
3. Split the dough into four pieces and slightly flatten each on the baking sheet {if they’re a little sticky, you can grease a piece of parchment paper or your hand to help.}
4. Bake for 8-10 minutes! Top with a mixture of powdered sugar + lemon juice + lemon zest.
