1. Preheat oven to 350F & grease a mini muffin pan. 2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients. 3. Scoop the batter into the muffin tin {makes 22-24 mini muffins}, press a PB cup in the middle of each, and bake for 8-10 minutes!
