1. Preheat oven to 350F & grease a small oven-safe bowl {I used a mini loaf ramekin that is about 10-12 oz.}
2. In a blender, blend together all of the ingredients, then pour the batter into the bowl/ramekin, and bake for 23 minutes!
3. For the glaze, I stirred together powdered sugar with a little extra lemon juice + topped with lemon zest. Enjoy!
