1: Preheat oven to 350F and line a baking sheet. 2: In a mixing bowl, whisk together the milk and egg. 3: Stir in the flours, baking powder, beet powder, cacao powder, and sugar. 4: Use a mini cookie scoop to make about 23 mini cookies, flatten each (dough will be a little sticky, so you can grease a piece of parchment paper to help) and bake for 8 minutes. 5: Once cooled, spread icing in the middle of the cookies and top with powdered sugar. Enjoy!
