1: Stir together 2 cups almond flour, 1/2 cup maple syrup, and 1/4 cup mini chocolate chips in two separate bowls. 2: Line an 8x8 dish with parchment paper and press one bowl of cookie dough down into an even layer. 3: Spread the thawed vanilla ice-cream over the cookie dough layer. 4: You can either freeze until the ice-cream has set before adding the second cookie dough layer or press the cookie dough onto a piece of parchment paper and carefully lay it over the ice-cream. 5: Freeze for at least 5 hours before cutting into slices.
