1. In a mixing bowl, stir together the greek yogurt, maple syrup, diced pineapple, and coconut chips. 2. Scoop the batter using a large cookie scoop onto a plate or cutting board lined with parchment paper. This recipe makes 10 bars. Freeze for at least 1 hour. 3. Dunk each bar in melted white chocolate, top with extra coconut, and enjoy! Store the finished bars in the freezer.
