Delicious pumpkin snickerdoodle cookies filled with apple compote and topped with a cinnamon sugar coating, made for a perfect treat. This recipe yields 2 cookies and combines the flavors of pumpkin and apple with a hint of cinnamon.

1: Preheat oven to 350F & line a baking sheet with parchment paper. 2: In a mixing bowl, combine the pumpkin purée, vanilla extract, and oil—then add in the sugar, flour, cinnamon & baking powder. Dough will look a little sticky; set this aside to thicken a little. 3: Stir together all of the apple compote ingredients then set aside. 4: Stir together the cinnamon sugar coating ingredients, then set aside. 5: Split the dough in half, then drop one half into the cinnamon sugar coating and mix it around until fully coated. Repeat with other half & place them on the baking sheet. 6: Use the tablespoon to press a hole into the middle of each cookie, add half of the apple compote to each cookie, and bake for 13 minutes.
